Armand Arnal’s intuitive CUISINE follows nature’s rhythm finding a subtle and essential harmony in its fertile sobriety. A succession of expertise, from the gardener to the cook, which leads to an intuitive creation of a MENU highlighting nature’s flavours without restraining them.

Through the chef’s ENCOUNTERS, both far and near, bonds are created and come to fruition, blossoming into sensual and spiritual INSPIRATIONS.

Three chefs and one menu, find out more about Chiho Kanzaki and Marcelo di Giagomo's vision of gastronomy

Japanese chef Chiho Kanzaki first arrived in France when she was 20 years old, without speaking a word of French. Yet, her love for cooking carried her to enter great restaurants’ teams such as Lucas Carton or Le Violon d’Ingres. Then, she decided to go back to Japan to better her skills. In 2007, she came back to France and started working for Jean-Paul Jeunet first, then Mauro Colagreco (2 Michelin stars). Now, she works with Marcelo di Giacomo.

Marcelo is Argentinian. When he first attended the National University of La Plata, Marcelo first studied architecture but in the end, he ‘‘chose cooking over building’’. His experience as a cook started in chef Jean-Paul Bondoux’s brigade in Buenos Aires. He then joined his compatriot, Mauro Colagreco, at Le Mirazur and leant about pâtisserie.

In 2017, Chiho and Marcelo opened their own restaurant, near the Aligre market (Paris). Since then, they have been working together. In 2019, they were awarded with their first Michelin star.
