At the heart of the Camargue, La Chassagnette’s GARDEN draws its uniqueness from the soil of the Rhône delta. Either native to the Camargue or from further afield, vegetables reign here, each one of them waiting for the ideal HARVESTING time.

Armand Arnal’s intuitive CUISINE follows nature’s rhythm finding a subtle and essential harmony in its fertile sobriety. A succession of expertise, from the gardener to the cook, which leads to an intuitive creation of a MENU highlighting nature’s flavours without restraining them.

Through the chef’s ENCOUNTERS, both far and near, bonds are created and come to fruition, blossoming into sensual and spiritual INSPIRATIONS.

Son and grandson of the oldest butcher’s shop in Le Marais (Paris), Yoni Saada have always been in kitchens.

At 19, he started by pursuing studies of cuisine and bakery at Ferrandi in Paris. After graduating, he worked within prestigious kitchen brigades: next to Yannick Alléno at the Meurice hotel (3-starred restaurant), William Ledeuil at the Bouquinistes 2-starred restaurant, and the one of his mentor, Frederic Anton, at the Pré Catelan 3-starred restaurant.

In 2006, at 25, he opened his very first restaurant “Osmose”, and became renowned after participating at Top Chef tv show in 2013. The same year, he decided to open “Miniatures”, a semi-gourmet restaurant of French tapas.

In 2014, his new project “Bagnard” is elected Project of the Year by the Gault & Millau guide. Yoni Saada also received the 2014 Young Talent prize.

After the chefs Taku Sekine, Bruno Verjus, Sylvestre Wahid and Pierre Touitou, we are very happy to welcome Yoni to our vegetable garden and our kitchens, and we hope to share with you the exquisite fruit of this culinary reunion.
