At the heart of the Camargue, La Chassagnette’s GARDEN draws its uniqueness from the soil of the Rhône delta. Either native to the Camargue or from further afield, vegetables reign here, each one of them waiting for the ideal HARVESTING time.

ARMAND ARNAL’s intuitive cuisine follows nature’s rhythm finding a subtle and essential harmony in its fertile sobriety. A succession of expertise, from the gardener to the cook, which leads to an intuitive creation of a MENU highlighting nature’s flavours without restraining them.

Through the chef’s ENCOUNTERS, both far and near, bonds are created and come to fruition, blossoming into sensual and spiritual INSPIRATIONS.

ARNAL SETS UP SHOP AT MERCI / PARIS CONCEPT STORE’S KITCHEN

From March 27th to April 1st 2017, Arnal set up shop at Merci, the must-see concept store located on Boulevard Baumarchais in Paris.

Throughout the week, Chef Arnal worked the most subliminal, flavourful and perfumed fruits and vegetables into his cuisine, announcing the arrival of spring: an ode to produce that can only usually be found in La Chassagnette’s dishes.  

Far away from the Camargue and his garden-orchard, Chef Arnal needed to find a quality supplier. He naturally turned towards Alain Cohen, cofounder of the Comptoir des Producteurs shop and market gardener of Saint-Eustache orchards.

He nonetheless brought some of his flagship produce from his organic garden in the Camargue, such as red rice flour and candied lemon to add a meridional flavour to the local products. It was a short week, but it allowed gastronomy lovers to “savour” La Chassagnette spirit in Paris.
