A journey to Georgia
Sommelier Thomas Hilbert is fascinated by Georgian wines. Through his import agency Gravity Wines, he sources unique domaines in the most confidential regions. On the slopes of the Caucasus, he has discovered an extraordinary world that he would like to share with you.
Georgia is the birthplace of winemaking. For 8,000 years, it has practiced the ancient tradition of macerating grapes in large buried amphorae called kvevri. This This tradition has been preserved and ardently defended throughout Georgia, and is now registered as a UNESCO Intangible Heritage. While traveling around the country, sharing the table with winemakers and their families, Thomas discovered wines produced in the privacy of small estates (2 hectares max). “Each family produces its own wine,” he says. “They conceive wine, they embody wine. It's basically part of them.
Armand Arnal and his team loved discovering this world, through the wines that were selected by Thomas. Rare, astonishing and sublime bottles of white wine, red wine, orange wine or amber wine, natures, from maceration and pressing. Together, they have imagined a meal that defies the ordinary.
