Throwback to Christophe Dufau's visit at La Chassagnette in September 2019:
Being native of Draguignan, Christophe Dufau is an authentic globetrotter: after graduating from the Hotel and Catering School, he started his career working for renowned restaurants in France, in the UK, in Spain, in Italy, in Denmark, in Malaysia and even worked alongside Daniel Boulud in New York City, just like our chef Armand Arnal did before him.
In 2005, Dufau took the plunge and opened his very first restaurant, Les Bacchanales, near Nice in the South of France and was soon rewarded with a Michelin star.
Just like we do at La Chassagnette, Dufau changes his menu every week according to seasons and local produce availabilities. Committed to sustainable gastronomy, he advocates a locavore cuisine and carefully chooses his produce from small-scale producers located within a 250-km area. To go even further in this approach, Dufau also imagined a huge garden-orchard next to his restaurant.
This authenticity and singularity are really close to the values of La Chassagnette! That’s why we felt like inviting him to take over our organic garden and use it as his own playing field.
Christophe Dufau will do a stop-over in our kitchens on Sunday 29 and Monday 30 of September to create, in collaboration with the chef Armand Arnal and his team, two exceptional lunches combining “the garden instantaneous aspect, the immediacy of seasons and the present time of desires”. A foretaste leaving room for imagination!
