At the heart of the Camargue, La Chassagnette’s GARDEN draws its uniqueness from the soil of the Rhône delta. Either native to the Camargue or from further afield, vegetables reign here, each one of them waiting for the ideal HARVESTING time.

ARMAND ARNAL’s intuitive cuisine follows nature’s rhythm finding a subtle and essential harmony in its fertile sobriety. A succession of expertise, from the gardener to the cook, which leads to an intuitive creation of a MENU highlighting nature’s flavours without restraining them.

Through the chef’s ENCOUNTERS, both far and near, bonds are created and come to fruition, blossoming into sensual and spiritual INSPIRATIONS.

New Moon

A comet-like dinner.
On the evening of Monday 17 July, Armand Arnal will be inviting Masayo Funakoshi, from restaurant Farmoon in Kyoto, to celebrate the new moon while she is in Arles for an artistic residency at VAGUE ARLES.

To have a taste of this Japanese chef's cuisine, you usually have to go to Kyoto, to her restaurant called Farmoon, which is housed in a 町屋 or machiya, a traditional Japanese wooden house. There, Masayo prepares garden cuisine, juxtaposed with the restaurant, just like at La Chassagnette. She meticulously follows the seasons and the movements of the sky. Her kitchen is a permanent laboratory. In the end, every meal becomes a unique, magical experience.

Masayo and Armand have chosen to host their dinner on the evening when the moon disappears from the sky. It's an evening that nature loves (nocturnal animals find it peaceful and some plants grow faster). It's an evening that we humans appreciate as a blank page on which we can write new intentions. An evening when the Cosmos shines brighter.

The two chefs have come up with a dinner studded with dishes full of crystalline surprises and, perhaps, a touch of stardust.
